They certainly dont look 3mm thick ,what would they use 3mm in upholstery for ?

And if they are upholstery leathers then they've probably been chromium tanned - not much use for your average bushcraft crafter, who'll need veg tan.

It's likely that they had intended to say 3oz* ~ which is more usual for upholstery leather ~ it could also be that they made a rough guess. As others have noted, 3mm would be less than suitable for the bulk of upholstery uses.

These hides will almost certainly be chrome tanned (they definately won't be veg-tan). Plenty of bushy applications - bags, pouches, coverings, straps, clothing. Chrome tan can also be used as a facing over veg-tan spilt leather.
