I recently made some ramsons with olive oil with a dash of vinegar and put in a screw top jar.

And put in the fridge.How long would you think it will keep for.

Well, I covered ransom bulbils in light olive oil this time a year past and the jar's been on the top shelf of the fridge since. (I forgot it was there, the oil solidified and I thought it was something else entirely) and they're absolutely fine.

The rule of thumb is that if you open the jar and it smells of sh1t instead of garlic, that's botulism and you dump the lot asap, otherwise it seems to last really, really well :)

I made a load of ramson pesto and bagged it up in small portion sized bags and froze them.
I can now enjoy ramsons all year round ;-)

I also have some washed ramson leaves frozen in a bag too awaiting another recipe...
