I've just found this downloadable pdf
Not how to build a dryer but the "correct" way of "readying" and then drying food by a food science specialist. I found it a real good read and will be playing soon (if Santa has been good to me...I have been a good boy...really I have )

got a Dehydrator a few months ago not done much but male chilli powder and dried tomatoes in oil

ate all the Apple rings off the racks nice n tangy as they where cookers

Mmmm pear leather sounds lovely I'm a big fan of storebought dried pears but I can't replicate them with my dehydrater, the ingredient list says syrup... would the extremely knowledgable Toddy know the process for syrup drying, perchance?!
