I use quilts in the cooler months, a foam mat will act as a vapour barrier resulting in moisture not being able to escape. I sometimes use a mat in summer when the differences in temperature reduces the amount of condensation.
The DD travel hammock does increase condensation issues over using a mat in a breathable hammock as it cocoons more of the body, it was about twice as bad for me. But it will occur in both circumstances. I speak from experience.
