After cutting out the top and drilling the baffle, I've now added a door at the base, for lighting a small fire, or putting in a gas burner.
Here's the door all cut out and ready for use:
After making the door, the next job is to make a wooden top, to keep all the smoke in, I started off with 4 pieces of off cut wood from my garage doors, and biscuited them together to make a nice solid top.Here's the top in progress:
Here's the lid all trimmed up, with a handle added for easy removal.
Now the lid was done, it was time to add some stops for the baffle plate to sit on, for this I used some bolts, and positioned 3 of them around the lower section of the drum. The baffle plate drops in nicely onto this, with enough height above, for the smoke to diffuse.
Now the diffusers in place, the next part for now is to hang a temporary rack in place, for this I've used an old cake cooling rack, nicked from the missus! But my good friend Ogri The Trog, has a very nice bit of stainless mesh on the way for me!

If you close the tank,the fire goes out,it sufficates in its own smoke,so...
keep the bottomdoor open,ajust the flow with the dooropening,and keep the top wet to slowdown the flow.
stick some metal pins through the tank,just under the top,to hang the fish and go slow!
slow smoking is the best,2 or 3 hours is o.k.

Here in holland we smoke a lot of fish,but we don't close the tank with wood,but a soaking wet 25 kg big potatobag from a farmhouse,it lets the smoke through very slowly,so there is a constant flow of fresh smoke passing the fish.
we smoke them with oak ,a mixture of crumbs and sawdust is the best.
The bag must stay wet all the time,spray it every 15 minutes,and we keep the bag for the next time,cause it gets creased and closes of better when it gets older.
