Ok marinated the beef overnight, put oven on this morning (electric fan assisted) to the 60degree centigrade mark, lined base with foil, wedged door open, skewered beef dsngled on top rack in oven.
IT TASTES PERFECT AFTER TWO HOURS???
Is it because of the fan assist?
I used Tesco frying steaks (quite thin)
The shortest drying time I've seen is for 4 hours
If I leave it will it go hard and crack
