I just came across an interesting recipe in Welsh Country cookery by Bobby Freeman

Gwin Danadl Poethion
Nettle Syrup

Nettle tops can be used to make this old-fashioned syrup for a base to be diluted with soda water to make a cooling drink.

Wash the nettle tops thoroughly. To every pound add two pints of water. Boil for an hour,strain and to every pint of juice add 1lb sugar. boil for 30 mins. Bottle when cold.

Has anybody tried this?

Not yet,

but i might have a go at this, it's very similar to other syrup recipes i have tried like rosehip syrup. :D

I've made this before and its a very nice drink - quite an unusual taste - somewhere between a ginger beer, elderflower cordial and a health tonic - I usually add a bit of root ginger to mine as I always like that spiceyness in it!
