I'd go for 1 sided, I find them easier to use.

Btw Tamarack (http://www.tamarackoutdoors.co.uk/) have got a couple of nice ones made by Ben Orford, a small spoon one and an Indian one (like wot Mr Mears used to carve his padels)!
Quite pricey but good quality.

Being a lefty,I went for a cheap two sided knife. No complaints at the price.

If you are learning to use one a single is probably safer, but if you are left handed it may be worth getting the double instead.

You can always check out Axminster (http://www.axminster.co.uk/product.asp?pf_id=19690&group_id=&prodpage=1#catprods) for thier selection of carving tools :)

I'm a southpaw so I guess I'll go for double sided.

Remember that single or double sided - they come in left and right hand models.
