I could do with a cheap, stainless, fixed, sheathed filleting knife if anyone has upgraded from their budget version.

I have a Finnish knife complete with sheath which sounds perfect for you if you're not already sorted.
It's brand new and a well intentioned gift, but I'll never use it. Would happily swap for something small or whatever...
