Salami of some sort is always good. It is water proof, doesn't freeze or melt readily has protein and fat and a strong flavour. You can eat it as is or cook it into something.
Over here we have a type of dried sausage called a "kabanos (http://en.wikipedia.org/wiki/Kabanos)" which is a pretty good bet.
It is similar to pepperami but not as spicy and an awful lot better value.

we've got Kabanos too sam, they might be better value than pepperami but I don't think they taste as good.
There must be other things you can take to go with noodles etc that are light and resilient enough? Not quite Jerky but can you not dry bacon to the point it doesn't go off? I bet that would go down a treat!

i love them, on there own or with egg and bacon mmmm
Pork might work if you just used the loin cut real thin. But I'm thinking too much fat in piggy to make a jerky type product. If you can find slab bacon that is hard smoked that will last about a week in your pack.
