Anyone interested in knife sharpening might want to look at some experiments carried out by a university in the US, they tried different methods and have pictures of the knife edges taken under a scanning microscope. It is in the downloads section.

Thanks for pointing that out. It's nice to see somebody has done the scientific research to back up what I've been telling people for years! :)

I've not read it in it's entirety yet (55pages!) but I will. ;)
