Went to a spot today that was literally carpetted with Rosebay Willow herb. I know it's edible, but the taste isn't, well, that good!

Anyone found a way to make it tasty, or at least palletable? :?:

How about making a pesto from it? Pine nuts, olive oil, few other hebs, some sour cream or soft cheese and a big handful of rosebay willow herb - blend it all together and stir into cooked pasta. :yumyum:

Tried some today and I have to say that the bitterness of this plant seems overrated to say the least ... it's not as bitter as I seem to remember it was! Both the leaves and the pith of the stalks were palettable.
Either my tastes have changed or I came across an unusually tasty patch!
