Dave's Nettle soup recipe

Tried a new nettle soup recipe out on my unsuspecting mates last weelend

4 large handfulls young nettle tops
1 finely chopped onion
1 vegetable stock cube
approx 2 pints water

Chop nettles and onion finely, place in billy with stock cube and water, Bring to boil then simmer for half an hour...Serve

They thought it was spinach soup !! :lol: (it was delicious though!)

This soup is absolutley brilliant!!!!!!

Its the only thing I've ever known that will shut SWMBO up......

I made some today, but I added a spud along with salt and pepper. While I was cutting up the nettles she said her tongue was itching. As the the soup was on the stove cooking her tongue swelled up and she was unable to talk....... It tastes good too........ :twisted: :twisted:

Yes, she has read this and now I have a swollen lip too....... :-( :-?

I've seen a suggestion to use a rice cake to thicken the soup, too. I tend to use a spoonful or two of frozen leftover rice for the purpose in the kitchen.
