I remember reading a book about Wicca and it said that if you needed a new staff or somesuch you should ask any tree you needed to cut from for permission. Not restricted to Elder. If you asked for such permission the tree may suggest a suitable branch to you.

I tend to prefer a click pen for its one handed operation, but they are only really practical if you have a shirt or jacket pocket to carry them.
For a more robust edc I like the Rotring 800 series. Twist top design which can still be done one handed, but the whole writing end retracts so there...
It's a really nice knife for the price. No complaints at all. It's a ballbearing pivot and the fit and finish seems good to my eyes. Handy little size as well.

For work it's a QSP Penguin Mini. I know this is a locking knife, so doesn't really fit the OPs criteria, but the one handed opening...

Are you confusing the rings in the video with something else? These are aluminium rappel rings. Needle sports are listing them as 0.045kg (Noticed that is packed weight. 30g on their own.). Not sure if that is your version of a 'ton' but I thought they were pretty light, though I realise that is...
