A lovely chilled out weekend, this was home for a few nights
Went for a stroll around and about
Did some cooking, obligatory steaks and veg done in the embers of course, and prepped the pork butt with cajun seasong to marinade overnight. Cooked the rind over the fire for some lovely crispy crackling, mmmm
Wonder what's in here
Cajun seasoned pork butt, oak smoked before searing in the dutch oven and cooking with veg and stock, low and slow for four hours, it was as tender as you like and tasted amazing
And then rest and relax some more
Had the leftover pork cold in a couple of rolls with bbq sauce for lunch next day.
Made up a few simple benches for the woods, treated softwood sleepers, dug in the first three this morning and gave them a try out catching my breath on a warm and humid morning !
